Two of my most frequented sources are the American Heart Association cookbook and Rachael Ray’s 30-Minute Meals. I would say the best overall recipe (easy, yummy, healthy, inexpensive) is the Tuscan Chicken with Roasted Garlic Aioli!
Avocado Sauce
Balsamic-Honey Glazed Pork Medallions
Mini Banana Bread with Chocolate Chips
Sauteed Green Beans with Red Onion
Shepherd’s Pie (aka Cottage Pie)
Sherry-Garlic Beef and Mushrooms
Teriyaki Sauce (gluten free or regular)
Tuscan Chicken with Roasted Garlic Aioli
Here is an example of my meal plan for the week. It may seem a little OCD but it takes alot of my daily stress away and saves me money! I just modify it Sunday night and grocery shop on Monday- only once a week! (except for more fruit and veggies on Friday)
